Vegetarian pizza bianco
1 egg plant
1 dl olive oil
salt
2 mozzarella
0,5 dl yellow raisins
50 g pine nuts
1 pack pizza dough
1 onion
2 tea spoon sugar
2 tea spoon vinegar
4 anchovy
50 g basil
1 clove garlic
50 g parmesan
30 g pine nuts
1 dl olive oil

Heat up the oven to 250 degrees C. Toast 50 g pine nuts in a dry pan. Cut the egg plant in slices. Place on a plate and add salt. Leave for 30 - 60 minutes. Mean while slice the onion and fry in oil. When the onion is soft add sugar and vinegar and anchovy and let simmer for 10 minutes. Add salt and pepper. Mix basil, garlic, parmesan, 30 g pine nuts and olive oil with a stick mixer to a pesto. Press the egg plant slices with paper to remove the liquids. Fry the egg plant in some oil until golden. Place the pizza dough on a tray and bake for 5 minutes. Take out of the oven and add sliced mozzarella, egg plant and fried onion. Bake for 5-8 minutes. Drizzle pesto on top and sprinkle pine nuts and raisins.
