Tabbouleh with cauliflower (4p)

Tabbouleh is a salsa which usually have a base of couscous or bulgur. This variant is made with cauliflower and with less carbs. It works with fish or grilled meat.

4 dl grated cauliflower

4 tbsp finely chopped tomato

4 tbsp finely chopped onion

4 tbsp finely chopped cucumber

4 tbsp finely chopped parsley

4 tbsp finely chopped menthe

2 tea spoon olive oil

2 tea spoon lemon juice

salt and pepper

Boil a saucepan of water with a little salt. Pour in the cauliflower shortly. Drain the cauliflower and let drip off. Mix cauliflower with tomato, onion, cucumber, parsley and menthe. Pour in olive oil and lemon juice and season with salt and pepper. Stir.
