Sweet potato and halloumi patties

400 g sweet potato
200 g halloumi
3 tbsp corn starch
butter, oil
Topping of your choice, for example avocado, crème fraiche, white fish roe and chopped red onion
Peel the sweet potato and grate. Squish the liquids out. Grate the halloumi and mix sweet potato, halloumi and corn starch. Heat up butter and oil in a pan and fry patties of sweet potato and halloumi until golden. Top the patties with topping of your own choice.
