Sushi salad
Sometimes you crave for sushi and does not have the energy to make your own or don't have the possibility to buy sushi. At those times this salad is a good option.
4 eggs
5 tbsp Japanese soy
5 tbsp mirin
2 dl vegetable stock
200 g sushi rice
6 tbsp rice vinegar
2 tbsp sugar
salt
1 tbsp miso paste
a piece of fresh ginger
2 tbsp oil
1 tea spoon sugar
2 tea spoons matcha powder
2 avocado
0,5 cucumber
150 g sugar snaps
1 carrot
2 tbsp white and black sesame seeds
Boil the egg to soft boiled. Mix Japanese soy, mirin and vegetable stock. When the eggs are cool peel and place in the marinade in the fridge for at least 1 hour, or over night if possible.
Boil the sushi rice according to the pack. Boil 3 tbsp rice vinegar, 2 tbsp sugar and a little salt in a saucepan. Pour over the rice. Mix 3 tbsp rice vinegar, miso, grated ginger, oil, 1 tea spoon sugar and matcha powder to a dressing. Slice the cucumber. Peel and slice the carrot with the peeler. Cut the avocado in pieces. Plate rice, avocado, cucumber. carrot and sugar snaps in bowls with the eggs. Drizzle dressing over and sprinkle the sesame seed.
