Salmon salad

A fresh and healthy salad made of smoked salmon.

1 red onion

2 tea spoons apple vinegar

1 tea spoon sugar

0,5 cucumber

250 g boil grains, for example barley, whole wheat or quinoa

150 g cherry tomatoes

20 g chopped dill

2 tea spoons olive oil

100 g smoked salmon

Slice the red onion thinly. Cut the cucumber lengthwise. Remove the core and slice the cucumber. Mix vinegar and sugar and add the onion and the cucumber. Leave for 10 minutes. Mix the grains, halved cherry tomatoes, dill, olive oil and salt and pepper. Add the pickled onion and cucumber without the vinegar. Slice the salmon. Serve in bowls.
