Saffron pudding

I found a pack of rice porridge in the the fridge. Leftovers from Christmas. It made me think of the Swedish island Gotland. A dessert from Gotland is a pudding with rice porridge and saffron served with whipped cream and jam. Perfect to make of the Christmas leftovers. 

500 g rice porridge

0,5 g saffron

1 tbsp sugar

1 egg

0,5 dl double cream

50 g chopped almonds

butter

Serve with:

whipped cream

jam

Heat up the oven to 175 degrees C. Grind the saffron and sugar in a mortar. Mix all the ingrediencies together. Grease an oven tray and pour the mixture in. Bake in the oven for 30 minutes. Serve with whipped cream and jam.
