Potato dumpling muffins

Palt is a Swedish potato dumpling. This version is made in the shape of muffins. Eat together with white fish roe, crème fraiche and chopped red onion or together with some meat and a nice sauce.

600 g potatoes

1,5 tbsp barley flour

2 tbsp flour

1 tea spoon baking powder

2 eggs

4 dl grated cheese, Västerbotten cheese

butter

salt and pepper

Heat up the oven to 200 degrees C. Grate the potato in a bowl. In another bowl mix barley flour, flour, baking powder, salt and pepper. Mix the eggs and the flour mix with the potato and add 2 dl grated cheese. Leave for 10 minutes. Grease a muffin tray for 12 muffins with butter. Pour the batter in the muffin tray. Sprinkle the rest of the cheese on top. Bake in the oven for 20 minutes.
