Pea patties in homemade tortilla bread
Pea patties
250 g dried yellow peas or green frozen peas
0,5 onion
1 garlic clove
2 tbsp chopped parsley
0,5 tbsp baking powder
salt and pepper
grated lemon zest
1 tea spoon cumin
2 tbsp chopped menthe
oil to fry in
If dried peas is used let soak in water for 12 hours. Peel the onion and the garlic. Mix peas, onion, garlic and the rest of the ingrediencies in a mixer to a smooth batter. Form patties and fry for 3-5 minutes per side in the oil until golden.
Homemade tortilla bread
3 dl corn flour
1 dl rice flour
1 tea spoon baking powder
2 tbsp psyllium seed powder (fiberhusk)
0,5 tea spoon salt
2 tbsp oil
3,5 dl water
about 1 dl corn flour for baking
Mix all dry ingrediencies. Mix in the oil and some of the water. Make a dough. If the dough is to dry add the rest of the water. Kneed the dough and split in 8 parts. Cover with plastic foil. Let rest for 10 minutes. Roll out to flat breads. Fry the bread in the oil in a pan for 1 minute per side. Place the made breads in a kitchen towel until serving.
Serve pea patties with veggies and favorite sauce in the tortilla breads.
