Pasta gratin with cauliflower and truffles

1 small cauliflower
2 tbsp olive oil
salt
300 g macaroni
1 onion
150 g spinach
250 g ricotta
50 g parmesan
2 dl double cream
1 tsk truffle oil
250 g mozzarella
black pepper
Heat up the oven to 200 degrees C. Split the cauliflower in smaller pieces. Put half in a tray and pour olive oil and salt over. Cook in the oven for 20 minutes. Boil the rest of the cauliflower in salty water a few minutes. Boil the macaroni al dente. Chop onion and fry in a pan. Add spinach and fry a little so the spinach is soft. Mix boiled cauliflower, ricotta and parmesan in a food processor. Mix in onion, spinach and cream. Add the macaroni and truffle oil. Season with salt and pepper. Add everything to a tray and cook in the oven for 20 minutes.
