Mini pies with kale (24 pcs)
These small mini pies are perfect on a summer buffet or as a pick nick. The filling can be changed to ham, feta cheese or tomato. In the picture the filling is only strong cheese.
4 dl flour
175 g butter
0,5 tea spoon salt
3 tbsp water
100 g kale
1 onion
100 g grated cheese
2 eggs
1 dl milk
salt and pepper
Mix the flour, butter and salt in mixer to a crumbly dough. Add the water and mix quickly into a pie crust dough. Place in the fridge for 30 minutes. Press the dough in two muffin trays (12 holes in each) and place in fridge for 30 minutes. Heat up the oven to 200 degrees Celsius. Remove the stem from the kale and peel the onion. Chop kale and onion in smaller pieces. Fry the kale and onion in a frying pan for 3-5 minutes. Mix cheese, eggs, milk, salt and pepper in a bowl. Place the kale and onion in the pies and pour the egg mix over. Bake in the oven for 20 minutes.
