Jerk tofu (en)

I discovered jerk seasoning on a trip to Jamaica about 10 years ago. It can nowadays be bought in larger supermarkets.
4 limes
2 tbsp jerk seasoning
2 grated cloves of garlic
2 tbsp grated ginger
250 g tofu drained from liquid
2 mango, peeled and sliced
1 dl chopped fresh coriander
2 tbsp olive oil
1 dl chopped almonds
0,5 dl toasted coconut flakes
Mix lime juice from two limes with jerk, garlic and ginger. Add the tofu cut in pieces. Let marinate for 20 minutes. Mix mango and coriander with the rest of the lime juice. Salt if needed. Fry the tofu in the oil, a little at the time until golden. Serve tofu and mango salsa topped with almonds and coconut.
