I love langos and like to eat them whenever the opportunity comes along, for example at festivals and food markets. Langos are a flat breadish delight made from chick pea flour. The filling is usually garlic, cheese, scrimps and crème fraiche. This version of langos is made from halloumi and is a bit more healthy.

2 dl grated halloumi

2 eggs

2 tbsp mayonnaise

The filling you like, for example, scrimps, chopped red onion, crème fraiche, grated cheese and roe.

Heat up the oven to 225 degrees C. Mix grated halloumi, eggs and mayonnaise in a bowl. Place a baking paper on a tray. Spread the batter on the paper in four flat breads. Bake in the oven for 15 minutes. Add the filling and serve.
