Sweet potato gnocchi

700 g sweet potatoes

6 dl flour or gluten free flour

1 egg

bacon

parmesan cheese

salt and pepper

 

Cut the sweet potatoes in smaller pieces and boil in salted water until soft. Grate the sweet potato in a large bowl. Poor in the flour and some salt. Make small pit in the middle and crack the egg in. Stir gently to make a soft and a bit sticky dough. Roll the dough to 1 cm thick and long strings. Cut into 1 x 1 cm pieces. Take a fork and make a pattern on each piece. Sift over flour if to sticky. Put the gnocchis in a boiling salted water until they floats up to the surface. 

Fry bacon. Keep the fat from the bacon and fry the gnocchis for one minute. Serve in a bowl. Grate parmesan cheese over.
