Ramp (wild garlic) soup (4p)
I was lucky to find ramp a sort of wild garlic in the forest. I made soup and some crackers.
Soup
20 g ramp
olive oil
1 dl double cream
1 dl crème fraiche
2 water
1 vegetable stock dice
1 table spoon flour
lemon
salt
pepper
Chop the ramp coarsely. Fry in oil for two minutes. Sprinkle the flour over and stir. Add cream, crème fraiche, water and stock and boil for 5 minutes. Season with salt, pepper and lemon juice. Mix with a stick mixer. Serve with some nice bread, focaccia in the picture.
Crackers (low carb)
75 g ramp
6,5 dl almond flour
0,5 tea spoon salt
1 egg
Heat up the oven to 180 degrees Celsius. Put baking paper on two trays. Fill up a bowl with cold water and some ice cubes. Boil water in a saucepan. When boiling turn off the heat and remove the saucepan from the stow. Add the ramp for 10 minutes. Pick up the ramp and place in the ice water for a few minutes. Mix the ramp in a blender with a little water to a smooth puree. Sift the puree. Add the flour, salt and egg to make a dough. Roll the dough between two baking papers to about 1 cm thick. Punch small crackers and place on the baking trays. Bake in the oven for 10-12 minutes.
