Pumpkin and apple focaccia

8 dl grated pumpkin
50 g yeast
5 dl water
1 dl cottage cheese
3 tea spoon salt
3 dl pumpkin seeds
16 dl wheat flour
4 apples
3 table spoons oil
Crumble the yeast in a baking bowl. Add cold water and stir until the yeast is resolved. Add pumpkin, cottage cheese, salt and pumpkin seeds. Add almost all of the flour. Kneed the dough for 10 minutes. Let rise in 1 hour. Press the dough on a greased baking tray. Let rise for another 30 minutes. Heat up the oven to 250 degrees Celsius. Slice the apples thinly and place over the dough. Sprinkle oil over and bake for 20-25 minutes. Let cool before slicing the focaccia.
