Poke bowl (4p)
Poke bowl is a perfect way to make use of leftovers. My kids love it since they can pick and choose the ingrediencies by them selves.
250 g sushi rice or cauliflower rice or bulgur
1 table spoon rice vinegar
salt
1 table spoon sugar
1 garlic clove
1 chili
1 table spoon grated fresh ginger
2 table spoon soya
1 lime
1 table spoon sesame oil
200 g salmon, tuna, surimi or any fish you like
Avocado, cucumber, carrots, soy beans, mango or other fruit and veggies
Pickled red onion or sauerkraut or kimchi
Deep fried onions, alga or sesame seeds
Coriander
1 table spoon mayonnaise and 1 tea spoon siracha
Cook the rice according to the pack. Make a sauce of the grated garlic, sliced chili, ginger, soya, lime juice and sesame oil and put aside. When the rice is cooked season with rice vinegar, sugar and salt which have been boiled up until the sugar resolves. Mix mayonnaise and siracha. Cut the fruit, veggies and other ingrediencies in small pieces and put in small bowls on the table so everyone can make there own poke bowl. Serve with the soya sauce and the siracha mayo.
