Mushroom risotto and beef patties

Mushrooms, fresh or dried (souk in water over night), of your liking. I used chanterelles.

5 dl arborio rice

1 l stock

Garlic

Parmesan cheese

Fry the mushrooms, rice and garlic in olive oil until the rice gets shiny. Pour 3 dl of the stock and lower the heat. Stir gently. When the stock have been absorbed by the rice keep pouring stock 1 dl at the time and stir. Cook and keep stirring for 15 to 20 minutes. When the rice is almost cooked through and most of the stock have been absorbed add grated cheese. Stir for one minute. Season with salt and black pepper.

Make beef patties using your favorite recipe mean while. I use bread crumbs, milk, garlic and mustard. Serve with veggies or salad. In the picture it is rocket salad and sauerkraut.
