Herring puff pastry (4p)

A recipe perfect in the beginning of the summer. If you can't find the typical Swedish herring, matjesill, use sardines.

100 g new potatoes

2 fresh red onions

250 g puff pastry

2 dl grated cheese

50 g matjesill (picked herring)

2 dl sour cream

1 dl chopped dill

Boil the potatoes until soft and let them cool. Heat up the oven to 200 degrees Celsius. Slice the onion thinly. Roll out the pastry on to a baking tray and make small holes all over with a fork. Bake in the oven for 10 minutes. Slice the potatoes and place the onion, potatoes and the cheese on the pastry. Bake for another 10 minutes. Place the matjesill, sour cream and dill on top and serve with a cold beer or a glass of sparkling white wine.
