Halloumi chicken (4p)
500 g chicken breast
1 halloumi cheese, grated
2 table spoons sesame seeds
2 table spoons finely chopped parsley
2 tea spoons dried thyme
2 eggs, slightly whisked
1 broccoli
150 g haricot verts
70 g fresh spinach
oil
salt
pepper
1 avocado sliced
100 g radishes sliced
1 table spoon honey
2 table spoons vinegar
4 table spoons olive oil
Heat up the oven to 225 degrees Celsius. Cut the each chicken breast in 3. On a plate mix grated halloumi, sesame seeds, parsley, thyme and pepper. Dip the chicken in the whisked egg, then in the halloumi mix and place on a tray. Cook in the oven for about 20 minutes or until the chicken is cooked.
Cut the broccoli in smaller pieces. Fry the broccoli and the haricot verts in oil for a few minutes. Place the broccoli, haricot verts, spinach, avocado and radishes on a large plate.
Mix the honey, vinegar and oil with salt and pepper to make a salad dressing. When the chicken is ready place the it on top of the vegetables and sprinkle the dressing over.
