Egg plant pizza
A vegetarian pizza that almost tastes like Swedish kebab pizza. I often use premade pizza dough from the store. It's so quick and easy to just roll out on a tray. But you can make your own dough as well. My kids aren't that fond of cooked veggies so I made a ham and cheese pizza for them.
Recipe
2 egg plant
olive oil
salt
rosemary
chili flakes
tomato sauce or tinned crushed tomatoes
mozzarella cheese
1 onion
2 garlic cloves
crème fraiche
Slice the egg plants in thin slices. Place the slices on a baking tray. Drizzle olive oil over and season with salt, rosemary and chili flakes. Bake in the oven in 200 degrees Celsius for 10-15 minutes. Take the egg plants out of the oven. Place the pizza dough on a baking tray. Spread tomato sauce over the dough, add egg plant, sliced onion and mozzarella. Bake in the oven for 15 minutes. Mean while grate or press the garlic in a pan with olive oil. Fry gently for a couple of minutes. Mix the garlic oil with crème fraiche. Serve the pizza with garlic sauce and some rocket salad.
