Chorizo and beef stew
The last years me and my family have spent Easter in Majorca, Port d'Alcudia. Last year and this year it was not possible. This stew gives me some of the Majorcan vibes.
600 g chuck of beef or some other part suitable for stew
200 g fresh chorizo
2 red peppers
1 onion or red onion
fresh rosemary
2 tomatoes
1 can of tomatoes
2 tea spoons cumin
1 tea spoon smoked paprika
2 dl red wine
water
olive oil
salt
Cut the beef, chorizo, onion, peppers and tomatoes in smaller pieces. The shorter time you have to cook the smaller pieces. Heat up some oil in a stew pot and fry the meat and chorizo until all sides are slightly browned. Add peppers and rosemary. Fry for two minutes and add the rest of the ingrediencies. Add as much water as to cover the stew. Boil for at least 2 hours. Use a slow cooker if you have one (cook for 4-6 hours). Serve with white bread, aioli and red wine.
