Chocolate mousse with caramelized nuts

3 dl double cream
2 egg yolk
4 table spoons cacao
4 table spoons icing sugar
1 table spoon dark rum
1 dl nuts, hazel, pecan, etc.
1 dl sugar
1 table spoon butter
a pinch of sea salt
Whisk the cream, cacao, icing sugar and egg yolk until fluffy. Stir the rum in (not for kids, put some of the mix aside before). Poor in serving glasses. Cool in the fridge.
Chop the nuts a bit. Heat up sugar until brown. Poor in the nuts, butter and sea salt. Stir around for a few minutes then poor on a baking paper and cool. Crack the caramelized nut chunk into pieces and and decorate the mousse.
