Cauliflower burgers (6p)
100 g white quinoa
400 g cauliflower
2 table spoons olive oil
1 tea spoon salt
1 tea spoon cumin
1 tea spoon paprika
0,5 tea spoon chili powder
1 dl fresh parsley, chopped
2 eggs
50 g bread crumbs
salt
pepper
oil to fry in
6 hamburger buns
mayonnaise
siracha
lettuce
avocado
pickled red onion
Boil the quinoa according to the pack and let rinse. Heat up the oven to 200 degrees Celsius and make small pieces of the cauliflower. Drizzle the olive oil over and sprinkle the salt, cumin, paprika and chili powder over and bake in the oven for 20 minutes. Let cool and then chop to small rice like sized. Put the cauliflower, parsley, quinoa, bread crumbs and eggs in a bowl. Stir to a mix that is possible to shape to burgers. If the mix is too dry add egg, if too lose and bread crumbs. Mix mayonnaise and siracha to a sauce. Fry the burgers until golden and serve with vegetables, sauce and buns.
