Asian wok with sweet potato noodles (4p)

500 g minced beef or minced chicken (beef in the picture)

10 fresh lime leaves

3 spring onions

300 g fresh spinach

2 table spoons red curry paste

2 table spoons soya

1 lime

300 g coconut milk

250 g sweet potato noodles

fresh coriander

peanuts

Boil the noodles according to the pack. Fry the curry paste and the lime leaves in some oil. Add the minced meat and fry until almost cooked through. Slice the spring onion and add to the wok along with coconut milk, soya and lime juice. Serve with the noodles and coriander and peanuts.
