Elder champagne

15 newly picked flower cluster of elder flowers
2,5 dl sugar
1 tbsp white vinegar
2,25 l water
0,5 lemon
Clean the flowers from insects but do not rinse in water. Mix sugar, vinegar and water in a bow. Rinse the lemon well and peel of only the yellow zest. Put the flowers, lemon zest and juice in the bowl. Cover and leave in cool room temperature in 24 hours. Sift and pour into clean bottles of glass or plastic with screw cork. Leave some room in the bottles. Leave in cool room temperature for 3-4 days. Remove one cork and see if bubbles are formed. Also try to pour some and see if bubbles are formed. If not leave for another day or two. If there are bubbles the champagne is ready. Keep in the fridge. The drink hold for a week or so.
