Cod and bacon with mash
600 g cod filet
1 pack of bacon
1/3 leek
1 clove garlic
50 g kale
1 dl grated parmesan
1 dl white wine
2 dl double cream
salt and pepper
700 g potatoes
2 tbsp butter
2 dl milk
salt and pepper
Heat up the oven to 200 degrees C. Peel and boil the potatoes. Chop the leek, garlic and kale. Cut the bacon in pieces and fry crispy. When the bacon is crisp add the leek, garlic and kale and fry for few minutes. Add the parmesan and stir. Turn off the heat. Season with salt and pepper. Place the cod in an oven tray and season with salt and pepper. Put the bacon mixture on top and pour over the cream and wine. Cook in the oven for 15-20 minutes until the fish is cooked. Make a potato mash of the potatoes and butter and milk. Season with salt and pepper. Serve the cod with mash. I had some shrimps in the fridge so I added those as well.
