Cauliflower risotto (4p)

This risotto made from cauliflower rice and quinoa works good with chicken filet or sirloin steak. 

2 dl quinoa

4 dl cauliflower rice (grate cauliflower coarsely)

1 dice vegetable stock

1 dl black beans

100 g fresh spinach

0,5 l crème fraiche

6 dl water

salt and pepper

Mix quinoa and cauliflower rice in a saucepan. Pour in the water and add the stock. Boil for 10 minutes. Mix in the beans and crème fraiche and spinach and stir. Turn off the heat and leave for 5 minutes. Season with salt and pepper.
