Cauliflower curry

A very quick and simple recipe. Serve with rice and naan bread.

500 g cauliflower

4 cloves of garlic

1 piece red chili

100 g butter

4 tbsp curry powder

3 dl cashew nuts

5 dl fat yoghurt

salt and pepper

2 spring onions

1 bunch fresh coriander

Split the cauliflower in smaller pieces. Chop the cashew nuts coarsely. Finely chop the garlic. Slice the chili. Fry the cauliflower, garlic, curry powder and chili in the butter. Save some chili for decoration. Fry in 5-10 minutes. Stir in the yoghurt and the cashew nuts and let be warm. Slice the spring onions. Decorate with spring onions, coriander and chili.
