Ajoblanco with plums

At this time plums are ripe. If you like me have plenty of plums it is sometimes hard to make use of them all. This Spanish garlic soup can be served with plums instead of grapes, which is more common.
3 slices of white bread
5 dl water
1 clove garlic
100 g sliced almonds
0,5 dl olive oil
2 tbsp white vinegar, for example white balsamic vinegar
salt and pepper
8 plums
100 g toasted sliced almonds
Put bread, garlic, water and 100 g almonds in a mixer. Mix for a while. Add the olive oil. Mix to a smooth soup. Season with vinegar, salt and pepper. Chill the soup in the fridge. Toast almonds in a pan. Split the plums and remove the pit. Cut in smaller pieces. Serve the soup with plums and almonds. Drizzle some olive oil over.
